Egg Pulusu

Ingredients:

Eggs - 4

Onions - 3

Green Chillies - 4

Salt

Chilli Powder

Garam Masala

Sugar / Jaggery

Tamarind Paste

Coriander

Tadka (Mustard Seeds, Cumin Seed, Curry Leaves, Dried Red Chillies, Garlic, Cloves)

Preparation Time: 15 mins

Cooking Time : 20 - 30 mins

Method:

1. Boil the eggs.

2. Cut onions and chillies into small pieces.

3. Add a little oil to your wok, and once the oil is hot, add the tadka ingredients.

4. Once the mustard seeds splutter add the onions and the green chillies.

5. Allow them to saute for about 5-8 mins on medium flame.

6. Now add salt(to taste), red chilli powder, tamarind paste to the onions. Mix well and allow it to cook for a while.

7. After about 3-5 mins of cooking on medium flame, add half a spoon of sugar or melted jaggery. Add a cup of water. Close the lid and allow the mixture to cook.

8. Take the boiled eggs, in a frying pan , take a teaspoon of oil and fry the eggs a bit.

9. Add the fried eggs to the gravy. Add a spoon of garam masala and mix well.

10. Close the lid and allow to cook for 5-10 mins on medium flame. Please check for consistency and taste and adjust accordingly.

11. Garnish with some coriander leaves and serve with hot rice.
