This is a favorite to eat with rotis. A little heavy cause I cook it with a little ghee in addition to the oil. But , taste dunt come without no oil :D
Ingredients:
1. Paneer
2. Carrots, Beans,(diced)
3. Corn, green peas (optional)
4. Potatoes 1
5. Onions
6. Green Chillies
7. Tomatoes
8. Ginger Garlic
9. Salt
10. Chilli powder
11. Garam Masala
12. Ghee
13. Coconut milk(optional)
14. Coriander Leaves
Preparation Time: 15 mins
Cooking Time : 20 mins
Method:
1. Cut the paneer into small,equal sized pieces.
2. Take ghee/ butter in a wok and fry the paneer pieces until golden brown. Keep aside.
3. Boil the potato for about 5-10 mins . Peel and cut into small pieces.
4. In the same wok add the potatoes, beans, carrot, peas and corn and fry for about 3-5 mins. Keep them aside with the paneer.
5. Now, in a different vessel, take a spoon of oil. Add cumin seeds, mustard seeds. Allow them to splutter and add onions and green chillies.
6. Saute them on medium flame for 5-8 mins. Add a spoon of salt. And a spoon of ginger garlic paste.
7. Mix well until the raw smell of ginger garlic passes away. Now add the diced tomatoes. Mix well and saute for 2-3 mins.
8. Now add the garam masala, coriander powder, red chilli powder and mix well. You may add 3 table spoons of coconut milk at this point if you wish.
9. Mix well and close the lid. Cook for 3 mins.
10. Now add a cup of water, close the lid and cook for 3 more mins.
11. Add the paneer and vegetable pieces. Check for consistency and taste of the gravy and adjust accordingly.
12. Close the lid and cook for 5-8 mins on medium flame. Garnish with coriander and serve with rotis
