Pappucharu

Sambhar is typical Tamil Nadu recipe I feel. Andhra we call it pappu charu. Its basically the same except for a few spices.
Its easy to make, less oil, lots of veggies.

Ingredients:

1. Toor Dal (1 cup)
2. Onions (1)
3. Green Chillies
4. Tomatoes (1)
5. Potatoes ( 1 medium sized)
6. Ridge Gourd (1 Small)
7. Turmeric
8. Coriander
9. Garlic
10. Tadka (mustard seeds, cumin seeds, red peppers, hing)
11. Curry Leaves
12. Ghee
13. Tamarind Paste

Prepration time: 15 mins
Cook time: 30-45

Method:

1. For 1 cup of toor dal , add 2 and half cups of water and cook it in a pressure cooker.

2. In a vessel, take some water and add diced onions, tomatoes, potatoes, ridge gourd, green chillies.

3. Add a spoon of salt and a pinch of turmeric. Close the lid of the vessel and allow the veggies to cook.

4. Once the dal is ready, and you feel the veggies are soft add the dal to veggies and mix well.

5. Now, add red chilli powder, salt(if not sufficient from before) and a spoon of tamarind paste and mix well.

6. Taste the stew for salt and chili consitency.

7. Allow it to simmer on medium flame.

8. In a different pan, take  a spoon of oil and a spoon of ghee. Heat it for a while.

9. Add minced garlic, mustard seeds, cumin seeds, red chillies, curry leaves and a pinch of hing

10. Now, add this tadka to your stew and mix well. Turn off heat.

11. Garnish with fresh , coriander leaves

Serve with papads and rice and your a hit!
