Raspberry flavored Cake

Well, this was impromptu effort. Since I have never made a flavored cake before, I was nervous and excited at the same time.

Prepration Time: 10-15 mins

Cooking Time: 40-45 mins


1. White cake mix

2. Raspberries (cut into small pieces)

3. Raspberry flavored gelatin

4. Vegetable shortening

5. Confectionars Sugar

6. Meringue Powder


1. Use the instructions on the cake box and make the batter. Usually one box can make two 9 inch cakes.

2. To this add a tea spoon of gelatin powder and raspberries.

3. Grease the bottom and edges of your cake pan using butter / flour.

4. Pour batter into the pan (make sure only half the pan is full) and put the same into an oven pre heated to 350 degrees

5.  Let it bake for 30 mins. Check if done, by inserting a toothpick. If toothpick comes out clean, then the cake is done.

6. Now, take 2 cups of vegetable shortening and 1 lb of confectionrs sugar and 1 tea spoon of meringue powder and mix well to make the icing

7.  Let the cake cool down. Apply the frosting and let it set for about 5 - 10 mins.

8. Serve with ice cream or with fruits

NOTE : I am still a novice at icing my cake and hence the crumbs show. But here is the complete process in pictures.

  1. I had a taste of this cake today and unlike some cakes at store which has either excessive of sugar or too much of raspberry flavor, this cake was perfect in balance. I was able to enjoy a soft delicious cake which reminded me of how home made cake used to taste like back in my days. Can't wait to see what rhea will think of next.. :)
