Peanut- Tomato Chutney

Ingredients:

1. Diced Tomatoes - 4

2. Peanuts - 50 gms

3. Green chillies - 5 (long slits)

4. Garlic - 3 cloves

5. Salt

6. Tadka ( cumin seeds, mustard seeds, chana dal, curry leaves, red chillies) - Optional



Method:

1. Roast the peanuts for 5 - 8 mins on medium flame and keep aside .

2. Take a spoon of oil in a pan and add tomatoes and green chillies and saute for 5 mins on medium flame. The raw smell of tomato should fade .

3. Now, in a blender add roasted peanuts, sauteed tomatoes and green chillies, garlic and salt.

4. Blend until desired consistency is achieved( I prefer to keep it coarse ).


5. Take oil in a wok. Add tadka ingredients. Once the mustard seeds start to splutter add the tadka to the blended chutney. *

6. Serve with hot dosas or idlis


NOTE: I did not use the tadka. But it sure adds a good flavor

Tomato pachchadi

One of my favorite chutneys to savor with dosas

Ingredients:

1. Tomatoes -4

2. Green chillies -6

3. Cumin seeds

4. Garlic cloves -4

5. Salt

6. Oil - 1tbsp

7. Chopped coriander

Method:

1. Cut the tomatoes into big pieces and slice the green chillies.

2. Take oil in a wok and add the tomatoes and chillies and sauté until raw smell of tomato goes away

3. Add the tomato and rest of the ingredients in a blender and blend till desired consistency is achieved.

Sorakaya Pachchadi (Bottle Gourd Chutney)

Ingredients:

1. Sorakaya
2. Green Chillies  - 5
3. Tamarind Paste - half table spoon
4. Garlic - 3 cloves
5. Cumin Seeds
6. Coriander
7. Tadka ( Red Chillies, Chana Dal, Curry Leaves,Mustard seeds)
8. Salt
9. Blender (needless to say ;) )

Cooking Time : 10 mins - 15 mins

1. Peel and cut the bottle gourd into decent size chunks. Also cut the green chillies.
2. In a vessel, heat a little oil and add the bottle gourd pieces and green chillies. Let them cook till the bottle gourd pieces turn a little soft.
3. Once the pieces are soft, allow them to cool a bit and shift them to a blender.
4. Now add cut garlic cloves, cumin seeds, salt , coriander, tamarind paste to the pieces and blend .
5. Take it off the blender once you get the desired texture for your chutney.
6. Heat a little oil add all the ingredients mentioned in the tadka. Wait till the mustard seeds splutter.
7. Add this tadka to the chutney and mix.

Serve with hot rice and ghee .
