Mutton Biryani

I had some mutton left over from the time I made the curry. So I decided to try my hand at mutton biryani. I make the chicken biryani but was skeptical to follow the same method, since I wasnt sure that mutton would cook well on steam. Also I needed something quick. So this is how I went about it.

Ingredients:

1. Mutton

2. Onions

3. Green Chillies

4. Coriander Leaves

5. Cloves

6 Cardamom

7. Red Chilli powder

8. Coriander Powder

9. Ginger Garlic Paste

10. Garam MAsala

11. Biryani Masala

12. Curd

13. Oil & Ghee

14. Basmati Rice

15. Lemon

Preparation Time: 15 - 20 mins

Cook time : 30 mins

Method:

1. Wash the basmati rice and keep aside.

2. Cut Mutton into pieces of desired size. Add a little ginger garlic, salt, red chilli powder, green chillies, coriander leaves, curd and marinate the mutton. Also squeeze half a lemon in the marinade.

3. In a pressure cooker, take 2 spoons of oil and 2 spoons of ghee. Add bay leaves, cloves, shahi jeera, cardamom and wait till the jeera splutter.

4. Now add the onions and sautee for 5-7 mins on medium flame. Add a spoon of ginger garlic paste. Saute till the raw smell of ginger garlic paste fades.

5. Add some tomatoes and saute well for 2-3 mins . Add garam masala, biryani masala and half a spoon of salt. Now add the marinated mutton mix well and close the lid of the pressure cooker. Cook until 3 whistles.

6. Later, remove the lid of the cooker and check the gravy for salt, masala and spice and adjust ingredients accordingly.

7. Now add the rice to this gravy and pour a cup of water . Close the lid and pressure cook until 3 whistles.

Serve with raita or just onions and lemon
